Breakfast Burritos on the Go

Breakfast is not always the easiest meal of the day. If you are in a rush to get your family out the door with a hot meal it can be nearly impossible. The hectic weekday mornings when you are trying to get yourself ready for the day, as well as your kids around and out the door for school, can make a hot breakfast nearly impossible. Breakfast is said to be the most important meal of the day, yet it’s the one we most often skip or just fill up with junk food like Pop-Tarts for Donuts. You can have a healthy breakfast on the go though, and it doesn’t take long to make these delicious Breakfast Burritos ahead of time. They will stay fresh in the fridge for a few days, or you can freeze them as well. You can either pop these into the oven to warm them up or microwave them for an even quicker meal. Because they are individually wrapped in plastic wrap they are easy to take with you as you rush out the door to warm up later.

You can add anything you want to these burritos. I personally have switched out the refried beans for refried black beans before, and added jalapenos, onions, cilantro, and sour cream to my burritos, switched out the chorizo for regular sausage crumbles, and made a western omelet version of these before. There is no end to what you can do with these. Use your imagination and your family will have a hot, healthy breakfast on the go in the mornings.

Ingredients for Breakfast Burritos

1 pkg. Large flour tortillas
2 C. Tater tots
1 lb. Chorizo (I use Veggie Chorizo Crumbles from Morningstar Farms)
10 Large eggs
1/3 C. milk
1 16 Oz. can refried beans
1 C. Shredded Cheddar cheese
1 C. Shredded Colby Jack cheese
2 Tomatoes (Roma or Garden Fresh)
1 C. Salsa of your choice
salt and pepper to taste

    Breakfast Burrito Directions

    Prepare Tater Tots according to package directions.

    While Tater Tots are cooking, crack all eggs into a bowl and whisk together with milk and add salt and pepper to taste. Cook chorizo in a large skillet until done. Put Chorizo in a bowl and add eggs into the hot skillet you removed the chorizo from. Scramble eggs in eggs until fluffy and set aside.

    Dice tomatoes into small pieces and place into a small bowl.

    Once the tater tots are done cooking, use a fork to crumble them.

    Using a spatula, spread the refried beans down the center of the tortillas and then layer the remaining ingredients over the top of the refried beans.

    Once you have the items layered fold in the sides of the burritos and then fold the bottom up. Roll the burrito tightly upwards until completely rolled.

    Wrap each burrito tightly in a piece of plastic wrap and store burritos in the refrigerator or freezer, depending on how quickly you will eat them.

    When you are ready to eat them, pop burritos into the microwave for 1 minute, turn them over, and microwave for another 30 seconds. They will be hot and ready to eat.

    These travel well and are much tastier and healthier than the ones you can buy at those fast food places, and the best part is you can add any fillings you prefer so they will always be to your liking.

    Change the fillings to your taste. If you want them spicier, add some jalapenos, or if you want them milder, switch out the chorizo for mild sausage, or leave it out altogether for a vegetarian option.

    Try switching out regular refried beans for refried black beans… they are my personal favorite.

    Switch out the above fillings for your preferred omelet ingredients and enjoy your favorite breakfast on the go.
